LOLA’S LAKE DONSTAN DISH.

This is a dish Lola invented on one of the colder days we’ve had while parked up on the side of lake Dunstan.

I like the way she’s inventive with what we have in the cupboard – just whipping up something using just a few simple ingredients is a great skill to have.

Method –

Start with some preparation and chop what’s needed.

Then softening the onions and garlic in a little oil, add the water and stock, and tined tomatoes. Slowly simmer and add the rest of the ingredients.

Add a little more water if needed, season with salt and pepper and serve with Hot toast.
