RHUBARB AND PLUMB CRUMBLE  (Gluten, dairy, and sugar free)

INGREDIENTS- FOR FRUIT BASE  –

Fresh rhubarb and plumbs ( organic, foraged from a beautifully big plumb tree at our campsite one night, see pix ) , and a little orange juice. When in the land of stone fruit- Otago- eat plumb crumble !

INGREDIENTS- FOR THE CRUMBLE TOPPING –

Rolled oats, gluten free flour, coconut oil. Linseed, sunflower, and almonds (LSA) x chia ground ( what we had ).

Slithered almonds,

Orange zest and honey.

METHOD –

Prepare the fruit- chop the rubarb and destone the plums, then put in into the oven dish ready for later.

Put all the crumble ingredients in a bowl and combine the mixture using your fingertips – adjust as you go with your amounts ! I believe Lola made it without a recipe – we’re very relaxed in the kitchen most of the time ! ( you could make some extra for another day too ).

Squeeze the orange juice on top of the fruit in dish, then add the finished crumble over the top of the fruit, then finish with the almonds sprinkled on top.

Bake until golden on top.

This is beautifully sharp dish, which we really like, but if you have a sweet tooth enjoy it with some hot custard, or vanilla flavored yoghurt. ( hhaaa, but then it’s not sugar free ! )
