MEXICAN BEANS WITH GUACAMOLE AND SALSA

Lola made us our dinner this evening, together with Isla’s help of waitressing !

INGREDIENTS-

FOR THE MEXICAN BEANS-

Two tins of black beans ( what we had, I like to use mixed beans – but use what you wish ) Chopped onion, couple of garlic cloves, teaspoon of ground cumin, seasoning, and a little oil for the pan.

FOR THE SALSA-

A fresh tomato, a red and yellow capsicum, a good chunk of cucumber, a small amount of red onion, fresh coriander, seasoning and a little dried chilli  flakes.

FOR THE GUACAMOLE-

Two avocados, a tomato, little red onion, juice of half a lemon, garlic or chilli if you wish, and seasoning to taste.

METHOD-

MEXICAN BEANS – Put the oil in the pan to start, while its heating chop the onions and garlic, add to pan and soften, together with the ground cumin. Drain the tins of beans and add to pan mush a little as it warms through, then season to taste.

Then get chopping the salsa and guacamole – basically chop all that’s needed and split it between the two bowls.

The beans will be ready by now too.

Heat the wraps in another clean pan, and serve with chili of some kind for extra heat, and fresh chopped coriander. I like a bit of green salad too but we didn’t have any !
