PUMPKIN AND COCONUT SOUP with a chilli kick.

Another one of Lola’s own, made up, homemade, super soups –

INGREDIENTS –

Fresh pumpkin,

1 onion,

Fresh garlic,

kumara ( sweet potatoes ),

Potato or 2,

Tin of coconut milk,

Seasoning, olive oil,

Dried chilli and fresh coriander.

METHOD –

Start by chopping and frying the onion and garlic, adding small pieces of chopped pumpkin, Kumara, potatoes, when fried a little add the coconut milk, seasoning and chilli. Simmer until all is cooked through. Then using a stick blender to partly blend the soup, leaving some textured bits. Adjust the seasoning and thickness with a little stock or water if needed. Serve seasoned on top with also chilli and chopped coriander, with  hot fresh crusty bread.
