LOLA’S COOKING BLOG

Hi, I’m Lola,welcome to my Cooking Blog. 

When I was little I loved playing with play-do making shapes of meals and watching mum in the kitchen now as I’ve got older I have been able to help out. I also like being arty and creative so combining different flavors I end up with artwork on a plate. I’m also aware that although some food may look good it’s not always good for you. I have participated in kiwi kids can cook  Northland competition at Wiamati north when my dish won getting me through to the finals for all NZ. Although I didn’t win the finals which were in Auckland it’s inspired me, giving me the confidence to share with others the joy and fun of healthy cooking. I hope you enjoy some of my healthy cooking ideas as we travel.

Anzac Buscuites

YUMMY ANZAC BISCUITES - INGREDIENTS - 2  cups of rolled oats, 1  cup of flour, 2/3  of a cup of coconut sugar, 3/4 cups of shredded coconut, 1/2 cup of butter, 1/3  of a cup of honey, 1 teaspoon of bicarb soda, 2 tablespoons of hot water. Tropical snack for on the move

Vegetarian spaghetti bolognese

VEGGIE SPAG BOG - this is a quick and easy go to dinner - while we were staying with friends Lola wanted to cook dinner for us all - she didn't follow a recipe and just used what we had - this is a will feed about 8 people. Pumpkin and coconut soup

PUMPKIN AND COCONUT SOUP with a chilli kick. Another one of Lola's own, made up, homemade, super soups - INGREDIENTS - Fresh pumpkin, 1 onion, Fresh garlic, kumara ( sweet potatoes ), Potato or 2, Tin of coconut milk, Seasoning, olive oil, Dried chilli and fresh coriander. Veggie brunch

VEGGIE BRUNCH - Its got to be a favorite - although not very healthy and a bit of a treat for us, but got to be done once in a while after a blustery walk on a cooler day. Kumara pie

KUMARA PIE - WITH NO SUGAR ! BASIL AND CASHEW NUT PESTO - This is a must do, so quick and simple to make - and so versatile to have in the fridge and ready to go anytime - either by itself, as a spread on hot bread, in a bake or pasta, or drizzled over your tomato salad. Good old traditional Cornish Pasty

GOOD OLD TRADITIONAL CORNISH PASTY - While staying with our friend Steve whos from the Chanel Islands in the UK , we decided to have a Cornish night at his place. Steamed muscles – Mexican style.

STEAMED MUSCLES - MEXICAN STYLE. While walking along the beach at low tide Isla spotted the big muscles on the rocks and was so excited at the thought of muscles for dinner. Venison patties with potato mash and greens.

VENISON PATTIES WITH POTATO MASH AND GREENS. While we were at slop point we were kindly given some home kill of wild venison from a fellow camper of which Lola made some very yummy patties out of. INGREDIENTS- Venison, 1 onion, 1 egg, seasoning, few slices of bread for crumbs to coat patties. New potatoes, Fresh greens, Oil for cooking.
