Hi, I’m Lola,welcome to my Cooking Blog.
When I was little I loved playing with play-do making shapes of meals and watching mum in the kitchen now as I’ve got older I have been able to help out. I also like being arty and creative so combining different flavors I end up with artwork on a plate. I’m also aware that although some food may look good it’s not always good for you. I have participated in kiwi kids can cook Northland competition at Wiamati north when my dish won getting me through to the finals for all NZ. Although I didn’t win the finals which were in Auckland it’s inspired me, giving me the confidence to share with others the joy and fun of healthy cooking. I hope you enjoy some of my healthy cooking ideas as we travel.

Mexican street corn.
MEXICAN STREET CORN. INGREDIENTS- 1 tablespoon of butter, 4 ears of corn or 2 tins, 2 tablespoons of mayo, 3 ounces of cotija cheese grated- Lola used vegan cheddar 3 ounce grated, 1/2 teaspoon smoked paprika, 1-4 red onion and spring onion finely chopped, a red capsicum, copped fresh coriander and seasoning to taste, and chilli or jalapenos too if yu love the heat. Lola’s lunch
While at a beautiful beachside camp at Fortrose we had some friends visit us for lunch one sunny day - right up Lolas street. So she wanted to do it all - POTATOE SALAD WITH APPLES - Boiled potatoes cooled and mixed with lightly softened leeks, red onions , chopped apple with a little mayo mixed through and seasoning to taste. SEEDED CRACKERS WITH HUMUS. INGREDIENTS- 1 cup of sunflower seeds, 3/4 of a cup of pumpkin seeds, 1/2 cup of chia seeds, 1/2 cup of sesame seeds, 1 cup of flax seeds, seasoning, and chili flakes if you choose.1 1/2 cup of water. Tuna rice cakes, with sweetcorn, cucumber, lemon and chili.
TUNA RICE CAKES, WITH SWEETCORN,CUCUMBER, LEMON AND CHILLI. Lola often makes this healthy snack. INGREDIENT- Rice cakes, Tuna, cucumber, sweetcorn, a fresh lemon, red onion, good mayo, chilli, and seasoning. METHOD- Just mix the tuna and a little mayo together with sweetcorn and seasoning. Then layer on the rice cakes with sliced cucumber. Top with lots of lemon juice and seasoning- Piece of cake.
Mexican Beans with Guacamole and Salsa
MEXICAN BEANS WITH GUACAMOLE AND SALSA Lola made us our dinner this evening, together with Isla's help of waitressing ! INGREDIENTS- FOR THE MEXICAN BEANS- Two tins of black beans ( what we had, I like to use mixed beans - but use what you wish ) Chopped onion, couple of garlic cloves, teaspoon of ground cumin, seasoning, and a little oil for the pan. Basic Pancakes with Raspberries
PANCAKES FOR SHROVE TUESDAY Lola wiped us up one of her basic Pancake recipes for breakfast. Lola always tries wiggling out of our everyday porridge for breakie ! luckily - as we all love pancakes. APPLE PIE While in Queenstown visiting friends one day Lola felt like making an apple pie to share. We had found some wild apples at a lakeside camp a few days previously and Lola was looking forward to doing something with them - Lets just say - that straight off the tree - they weren't as yum as they looked ! - but in the pie they were delicious. RHUBARB AND PLUMB CRUMBLE (Gluten, dairy, and sugar free) INGREDIENTS- FOR FRUIT BASE - Fresh rhubarb and plumbs ( organic, foraged from a beautifully big plumb tree at our campsite one night, see pix ) , and a little orange juice. Couscous salad with fruit and basil.
COUSCOUS SALAD WITH FRUIT AND BASIL. Lola's fresh and fruity salad for light summertime dinners. Lola's not done this one before, and came as a nice surprise last night after a hot day. Ingredients- See photo of Lola's hand written list. Method - Start by cooking the purl couscous, while its' cooking prepare the salad and fruit. This is soooo quick to make, and a surprisingly delicious combo - very fruity - enjoy with or without a dressing.
Fresh fish and salad
FRESH FISH AND SALAD Following on from our market outing today, Lola's cooked us a lovely healthy dinner this evening from our produce bought today...... See the photo of Lola's ingredients list. Method - Chop and prepare the salad. Cut the fish into small manageable pieces, and coat them in seasoned flour, then pan fry in a little oil. Toss the salad in a vinaigrette and serve.
